Ingredients:

1 lb. ground beef (I used 96% lean)
1 small onion, chopped
1 cup cream style cottage cheese (I used fat free)
1 can RoTel tomatoes
8 oz. tomato sauce
4.5 oz can chopped green chiles
10 (6inch) flour tortillas
2 cups shredded Mexican cheese blend

Methods:

Brown beef and onion till beef is no longer pink.Drain and return to skillet.stir in cottage cheese and set aside Process Rotel and tomato sauce in food processor till smooth. Stir in chilies. Spoon 2 to 3 tablespoons of meat mix down center of each tortilla.Top with 2T of tomato mix and 1 1/2 T cheese. Roll up tortillas and place seam side down in sprayed 13×9″ baking dish. Pour remaining tomato mix on top and sprinkle with remaining cheese. Bake at 350°F for 20 to 30 minutes.
